Instant Veg Biryani in Pressure Cooker: Quick & Flavorful Recipe!

Ingredients

  • Basmati Rice: 1.5 cups
  • Oil: 4-5 tablespoons
  • Onions: 2, mid size, and finely cut
  • Ginger-Garlic Paste: 1 tablespoon
  • Green Chilies: 3, slit
  • Mixed Vegetables: White Rennet, Green Beetroot, Green French Beans, White
  • Potato, Green Cauliflower, Green Carrots.
  • Paneer: 100 grams (optional)
  • Spices: JEERA 1 tsp., TEJ PATTI 2, LAUNG 5-6, DALCHINI 1″, KALI ELAICHI 4,
  • HARA ELAICHI 4
  • Curd: ½ cup (fresh and beaten)
  • Mint and Coriander Leaves: Fresh, chopped
  • Saffron: Soaked in warm milk
  • Salt: To taste
  • Spices: Red chilli powder – ½ tsp, Turmeric powder – ½ tsp, Coriander powder –
  • 1 tsp, Garam Masala – ½ tsp
  • Ghee: 1 tablespoon

Step-by-Step Guide to Making Veg Biryani in Pressure Cooker

  • Prep the Rice: To make this, I have taken one and a half glass of Basmati rice, first of all we will wash it well two to three times and there is no need to soak it beforehand, we will just wash it and keep it aside.
  • Prepare the Cooker: Now I have taken a pressure cooker here and adding four to five tablespoons of oil in it. We will heat the oil well here. First of all I am adding 2 medium sized long chopped onions in it.

We will fry the onion on high flame only then it will get cooked properly. Fry them till the onion becomes golden brown, after then take out all of it.

  • Fry the Paneer (Optional): Now cut the paneer into pieces and fry it and fry the paneer pieces lightly, now after fry the paneer take it out the paneer.
  • Add Whole Spices: Now add some standing spices in the same oil, so take a teaspoon of cumin, a little round table, a piece of cinnamon.

I have taken 5 to 6 long cloves, four small cardamoms and two bay leaves, put them in oil and fry them lightly for a few seconds, after fried them for a few seconds,

  • Cook the Onions: Add 2 medium Length of size chopped onion. I will fry it till the onion turns golden brown and keep the gas flame medium.  So after onion becomes golden brown.
  • Add Ginger-Garlic Paste and Chilies: Adding one spoon of ginger garlic paste in it, so crushed it and added it , you can also add its grind, take three green chillies, which is cut from the middle, mix it and cook for one to one and a half minutes. Cook it so that the usually raw flavor is gone,

Cook the Onions

  • Add Vegetables: Now take some vegetables, 1 bowl cauliflower, 1 carrots, 6-7 beans, one potato, cut the vegetables into some big pieces, so I will put it in the cooker. Adding peas in it in a ball and will mix all the vegetables well. You can use any vegetable of your choice.

Now cook the vegetables for 2 to 3 minutes on low to medium flame, so at this time we do not have to cook them completely, we will just cook them lightly so that the raw part of the vegetables comes out, so after cooked the vegetables for three minutes.

  • Add Paneer and Curd: Now we are going to add paneer in it and mix it well. Now we are going to add curd in it. Before adding curd, we will turn on the gas. Put half a cup of fresh curd in it along with a spoon, and before adding the curd, grind it well.

Now we will mix it well so that it gets coated well with all the vegetables and cook it on low flame for 1 minute. While mixing, it gets coated well with our vegetables. So started the gas flame. Keep it low,

  • Add Spices: Now we will add some spices in it, then I will add half a spoon of red chili powder and half a spoon of turmeric, one spoon of coriander powder and half a spoon of garam masala, then add two tsp of masala, I will add salt in it according to every taste, receipt. We will mix it well.

Now we will cover the on low flame for a minute, now after one minute we will mix it once. Now going to do layering for which I will keep the gas flame low, if you want you can also turn off the gas flame.

Add Spices

  • Add Rice and Water: First of all I will pour water in the match, we will put mint leaves on top of it, it is very much important, it give very good flavor and we will add some finely chopped coriander and add little fry onion in it.

And now add one spoon of desi ghee, And we will sprinkle light garam masala on top and we will also spread a little salt.

Now we will put rice on top and spread it with our hands, I have spread all the rice properly,

  • Garnish with Mint and Coriander: Now again adding finely chopped mint leaves, add finely chopped coriander leaves, add fry brown onion, add one spoon of desi ghee, add presoaked some saffron in milk.

What will happen after adding it, adding this biryani will get colored from the spot because no food color has been used in it. Some garam masala and salt will sprinkle.

So now add one glass of water in it, so in total used two glasses of water in it, out of which I had first put one glass of water in the vegetables below and now I have added one glass of water here last, then just put the lid of the cooker on, and don’t mix it.

  • Pressure Cook: Now we will put a whistle on the high flame, after that we will reduce the gas flame and let it cook on low flame for 2 to 3 minutes.

After then turned off the gas, let the things cool down properly, that is, we will let the pressure come out on its own.

  • Rest and Fluff the Rice: Now open the lid of the cooker. And see how beautiful the color is and the aroma is very strong.

With very light hands, we will lift up the bottom rice in such a way that the rice becomes soft and do it with very light hands so that our rice does not break, then I will cover it for 4 to 5 minutes.

Rest and Fluff the Rice
