Hello friends! Today’s recipe is banarasi tamatar chaat. If you have visited the streets of Banaras or enjoyed the famous street food there, then you must have heard the name tamatar chaat.
This special dish of Banaras is such a unique amalgamation of taste and spices, which is difficult to forget once you taste it. With the sourness of tomatoes, the spiciness of spices, and the crispy namkeen on top, this chaat touches everyone’s heart.
In this blog, we will tell you how you can easily make this famous tamatar chaat of Banaras at home. So let’s step into this world of unique taste!

Ingredients You’ll Need to make Tamatar Chaat:

  • 2 tbsp Sugar
  • ½ cup Water
  • ¼ tsp Roasted Cumin Powder
  • ¼ tsp Black Salt
  • 4 Tomatoes (400 grams)
  • 1 tbsp Ghee
  • ½ tsp Cumin Seeds
  • 1 inch Finely Chopped Ginger
  • 2 Finely Chopped Green Chillies
  • ½ tsp Turmeric Powder
  • 1 tsp Coriander Powder
  • 1 tsp Red Chilli Powder
  • ½ tsp Salt (for cooking tomatoes)
  • ½ cup Water (for cooking tomatoes)
  • 3 Boiled Potatoes (250 grams)
  • ½ tsp Black Salt (for potatoes)
  • ½ tsp Dry Mango Powder (Amchur)
  • ¼ tsp Garam Masala
  • ½ tsp Roasted Cumin Powder (for garnish)
  • 1 tsp Chaat Masala
  • 1-2 tbsp Chopped Coriander Leaves
  • Juice of ½ Lemon
  • 2-3 tbsp Desi Ghee
  • Sev, Namkeen, or Chips for Garnishing

Steps to Make Tamatar Chaat

1 Step: Prepare the Sugar Syrup

  • First, we will prepare sugar syrup.
  • Add 2 tbsp of Sugar to the cooking vessel and

  • 1/2 cup of water. Turn on the flame. Cook till the Sugar dissolves. Stir to dissolve the Sugar quickly. Sugar has dissolved completely,
  • Add 1/4 tsp of roasted cumin powder and 1/4 tsp of black salt. Cook the mixture for 1-2 minutes, and we are done. We don’t need chasing. Keep aside.

2 Step: Prepare the Tomatoes

  • Next, take four tomatoes (400 grams). Chop the tomatoes.

  • Take a Kadai. Add 1 tbsp of ghee to the Kadai.
  • Add 1/2 tsp of cumin seeds. Turn the flame low to avoid burning the spices. Roast cumin slightly.
  • Take 1 inch of finely chopped ginger. Adding ginger flavour will make this tamatar chaat delicious.

  • Add tomatoes and other spices: 1/2 tsp of turmeric powder, 1 tsp of coriander powder, and 1 tsp of red chilli powder.

  • Use fewer spices to give a nice colour so the tamatar chaat won’t be spicy. Turn the flame to medium and mix the tomatoes and spices. Add 1/2 tsp of salt so the tomatoes can get cooked quickly.

  • After 3 minutes, the Tomatoes are almost cooked. Mash them. We want entirely mushy tomatoes.

  • Add 1/2 cup of water, And let it cook
  • Take three boiled potatoes (250 grams) and break them down. After break the potatoes.

  • Add potatoes to the tomato, along with 1/2 tsp of black salt and 1/2 tsp of dry mango powder. You can also use tamarind pulp and 1/4 tsp of garam masala mash and mix everything properly.

  • Cook the chaat. Tomatoes & potatoes have mixed up properly
  • Now add other spices: 1/2 tsp of roasted cumin powder, 1 tsp of chaat masala, and 1-2 tbsp of chopped coriander leaves. Mix well.

  • We can smell the nice aroma of the chaat, Which is irresistible,
  • Take 1/2 lemon, turn off the heat, and add lemon juice to the chaat. This will enhance the chaat’s flavour. Mix well. Now our banarasi Tamatar chaat is ready.

3 Step: Serve the Tamatar Chaat

  • To the hot chaat, add desi ghee and prepared sugar syrup, adding 2-3 spoons. This will make chaat Khatta-meetha. Sprinkle chaat masala, cumin powder, and namespace.

  • You can take sev, nankeen, or chips instead, and coriander leaves. tamatar chaat is ready to be served.
